Ginger Broth With Vegetables


1 serving


¾ cup low-sodium chicken broth
1 inch fresh ginger root, peeled and chopped finely
1 T fresh lime juice
Pinch of salt
¼ cup cooked white or brown rice
¼ cup chopped, cooked white chicken meat
2 T shredded carrots
2 T chopped sugar snap or snow peas
2 mushrooms, sliced
1 package Unflavored Juven®
Chopped cilantro


Pour the broth into a microwave-safe container; add ginger and microwave for 1 to 2 minutes, until very hot. Remove from the microwave, cover and steep for 10 minutes. Strain broth and return it to the microwave-safe container.
Add lime juice, salt, rice, chicken, carrots, peas, and mushrooms and return to microwave for 1 to 2 minutes or until hot and the carrots are tender. Remove from microwave; stir in the Juven and add cilantro. Serve.
